The most well-known specialty in Polizzi is the “Sfoglio”, a cake made with minced fresh cheese, sugar, chocolate and cinammon. Another specialty is the “Sfogliettine” which is also made with the same type of filling.  The town’s delicay  are the “pasticciotto”, 
a pastry  filled with almonds, hazelnuts and candied fruit; and the Cuccidatu (buccellato) filled with raisins. The Naftolia Cultural Association has published a book entitled “Polizzi Generosa anche a tavola,” a collection of many local recipes.
